If one were to switch hosting providers, is there a chance you will loose search engine rankings or possibly even have index pointing to wrong version of site?

not really, if you duplicate your site on the new server before you switch the DNS for your domain name, then there should be no down time and the search engines go by domain name and not IP addresses anyway.
