Google serves ad based upon the "subject," of the site -- we know this.
Titles, H1 tags and body text all contribute to good SEO -- we know this.
Now combine these two things and make minor tweaks to your titles and text and watch in real time** how the ads that Google serves may change. Interesting, huh? That's right! We can gain valuable insight into what weight Google is putting on the structure of our titles and text and use this insight to better optimize pages.

** I've noticed that one of two things happen when making title, text changes, etc. Either the ads change immediately or it will take 2 days to see any effect. There's usually no middle ground and there seems to be no rhyme or reason as to why. So if you are trying these experiements, be methodical in your testing. Make one change and even if you don't see an immediate difference, wait a day or two before you make another change.
