If you're going to pay for it, I'd encourage you to pay an attorney.
More practical would be to browse some larger sites you're familiar with (yahoo, google, sitepoint.com) and examine their privacy policies, basing yours on that (but only if you understand why and what they're doing in their privacy policies, e.g. the US requirement that you not collect info on underage juviniles, etc.)
As for copyright, there's no need for notice -- your info's covered by copyright by virtue of you having published it online -- but, if you want to simply include the "Copyright © 2006" type notice.
BTW, none of this really stops someone from copying your info if they want. It may mean that -- if you're willing to pay thousands of dollars to sue -- you might get some legal recourse. But it doesn't stop the copying in the first place.
IMHO I'd worry less about people copying / privacy policies than I would about #1) just being ethical and #2) actually making some money off of your site.
AFTER you've got a working business / money-generating site, then put some more blocks in place.
